Balsamic Vinegar of Modena IGP High Density Certified "Sustainable Quality" at SIAL Paris 2024

From October 19 to 23, we will be present at SIAL in Paris, the international food fair, where we will preview our new High Density PGI Balsamic Vinegar of Modena, certified "Sustainable Quality."

This innovative product is the first in its category to obtain the prestigious SNQPI certification - National Quality System for Integrated Production, an award that recognizes our company's commitment to agricultural production that respects the environment and people's health.
ELSA Sustainable Quality is the first product to be made from 100 percent grapes from our Solara vineyard, in fact the main ingredients - cooked must and wine vinegar - are produced from our 0 km grapes.

 

 

Commitment to sustainability

 

Our sustainability project stems from ELSA's vineyards, spread over more than 100 hectares, the family's farm, which has been cultivated with the most modern integrated farming techniques for more than 40 years. Thanks to the adoption of precision farming practices and low environmental impact techniques, ELSA now represents the first vineyard in the world entirely dedicated to the production of certified sustainable balsamic vinegar. This virtuous process, which begins with the pressing of grapes at kilometer zero, ensures a product that is not only ecologically responsible, but also of the highest quality.

From zero-kilometer grape crushing to bottling, every stage of production is characterized by a deep respect for the environment. The use of innovative technologies, such as precision irrigation and mechanical weeding, makes it possible to optimize the use of natural resources and reduce environmental impact but also safeguard the health of farm workers.
