Beef tartare in balsamic vinegar with avocado puree, fried onion rings and Maldon salt
This beef tartare is a sophisticated blend of delicate textures and bold flavors. The finely hand-chopped beef is seasoned with olive oil, lemon, and garlic, then layered over a silky avocado puree. Cut the onion into thin slices with a circular cross section, place in water, drain, dredge in flour and fry in hot oil. Drain with a slotted spoon and let dry on paper towels. Keep aside. Then cut the two avocados in half and scoop out the pulp with a spoon. Transfer it to the blender along with the strained lemon juice and reduce it to a silky smooth cream. Season with salt and freshly ground pepper and store in the refrigerator so it does not oxidize.
Cut the meat first into slices and then into cubes. Beat it with the tip of a well-sharpened knife until the desired grain is obtained. Collect it all in a bowl, add the lemon juice, salt,
pepper, chopped garlic to taste, and drizzle with olive oil. Arrange the tartare in 6 circular ramekins 6-8 cm in diameter, arranging first the meat layer and then the avocado layer. Level with the back of a teaspoon, exerting a fair amount of pressure. Remove the ring and top the dish with the fried onion, a few leaves of arugula and a few drops of Balsamic Vinegar of Modena IGP Passion of Family Monari Federzoni. Serve immediately.
