directions
First off, peel the citrus fruits using a knife. Peel and cut fennel into thin slices using a knife or a mandolin. Place fennel in a bowl together with oranges, pink grapefruit, black olives, wild fennel and rocket. Season with oil, salt and pepper emulsified with Apple Glaze Monari Federzoni, in the desired amounts. Finally, mix, add diced goat cheese and serve.
