Clean the prawns, wash them, remove the head and carapace, then make an incision in the back and remove the intestines. Cut them into very small pieces and collect them in a bowl with a teaspoon of Monari Federzoni White Wine Vinegar, the salt, pepper, diced strawberries and 2-3 cloves of red grapefruit, peeled to the flesh and cut into small pieces. Also add the chopped mint, mix and let macerate for a few minutes in the refrigerator covering with food-grade foil.
Plate the tartare with the help of 4 ramekins of the chosen diameter, let it settle for a few minutes and serve with a drizzle of raw oil and a few leaves of misticanza.
