Pork tenderloin with Marsala Glaze is a richly flavored dish perfect for a special dinner. ingredients
800 g pork tenderloin in one piece |
4 carrots |
2-3 tablespoons of olive oil |
1 knob of butter |
1 clove of garlic |
2 juniper berries |
3 cloves |
2 sprigs of rosemary |
A few sage leaves |
2 tablespoons of Monari Federzoni Marsala Glaze |
100 g sliced taut bacon |

Massage the pork tenderloin with salt and pepper. Wrap it completely in the bacon slices and then tie it tightly with kitchen twine. Brown it in a saucepan evenly on all sides, turning with two wooden spoons without ever piercing the meat. Remove it and place it on a baking sheet lined with parchment paper. Bake for 10 to 12 minutes at 180°.
In the meantime, add the Marsala Glaze , 100 ml hot water, herbs, crushed garlic, peeled and chopped carrots and spices to the same cooking juices as the tenderloin in the saucepan. Leave on the heat to thicken, then add a knob of butter and let it melt until thick and until the vegetables are cooked through.
Remove the tenderloin from the oven, remove the twine, and cut it into slices. Serve it with its sauce and, if you like, add more Marsala Glaze.
