Trio of bruschette

First prepare the caramelised onions. Peel the onions and cut them into thin slices. In a non-stick pan over medium heat, add oil and the onion slices and cook slowly until soft, stirring occasionally. Add the sugar and Balsamic Vinegar of Modena Glaze and continue cooking over low heat until the onions become caramelised, stirring often to prevent them from sticking to the pan. Adjust salt and pepper to taste.
Separately, wash the red cabbage and finely chop it. Wash the cherry tomatoes, cut them into 4 pieces and season to taste, adding the clove of garlic and chopped basil.
Cut the bread into slices, toast it and drizzle with a little oil.
Start by topping the slices, the first with stracchino cheese and Parma ham and red cabbage, the second with caramelised onion and the third, the classic bruschetta, with fresh tomatoes and basil. Finally, decorate with Balsamic Vinegar of Modena glaze.
